WAX ME BABY! Cheese Waxing Cold Smoked Cheeses!
Six months ago I cold smoked some cheap grocery store Gouda and Mild Yellow Cheddar and then waxed preserved them to age – This experiment was to see how the flavors would develop using an ancient method of preserving cheese. Did the flavors improve, and if so, how? Did the smoke flavor come through, or was it lost? How did the texture, and color change?
