About Our Cheese…
Here at Smokey Dave’s we concentrate on one thing: Smoking the best cheese we can find and bringing that wonderful smoked cheese to you. We don’t make our own cheese because we know that the best cheeses are made by those who have perfected their recipes and processes for years, decades, and in many cases, centuries!
We dedicate ourselves to the one thing WE do best, and that is smoking cheese!
About our Shipping Process…
Because cheese is a semi-perishable product, Smokey Dave’s cheeses available online will always be shipped in a insulated envelope and will include a cold pack. We use USPS “2 day priority mail” to insure it gets to you quickly!
Delays in shipping and hot weather can result in conditions where the cheese you receive may be warm, and may feel somewhat soft. This is normal and will not affect your cheese in any negative way as long as the vacuum packaging is undamaged.
For this reason we do not ship soft cheeses such as Brie or Mozzarella. For those varieties you will have to visit us at our home location or at one of our festival events or Farmers Markets (see our Events Calendar for those). If you are in our area, you can also choose local drop off.
Always inspect the vacuum packages to insure that no punctures have occurred, and then refrigerate. If the packages have been damaged or the vacuum was lost, discard the product and do not consume it! Please let us know if something is wrong and we will do our best to make it right!
When cheese was developed thousands of years ago, one of it’s main characteristics was that it would have a long shelf life. Smoking and vacuum packaging greatly extend the life of the cheese as well. Most hard cheeses such as Parmesan or Cheddar have a shelf life of 10 months or more. When waxed or vacuum packed this life can even be further extended (that is why some cheeses can be aged for two or more years!).
Refrigeration is the best and safest method to keep your cheese fresh and delicious. Keeping it in a sealed container once opened will help keep all that smokey goodness inside the cheese where it belongs!
